I LOVE a fresh-tasting drink in the summer. This Cucumber Lime Party punch certainly hits all my criteria for a perfect summer cocktail: fresh, light, crisp, and SO easy to put together (just 4 ingredients.. or 3 if you’re making a non-alcoholic version!). You could make this punch as early as the night before you plan to serve it, all the way up to 2-3 hours before serving. Letting the punch sit allows the cucumber flavor to really come forward.
I like to fancy this punch up a bit by spiralizing my cucumber using the ribbon attachment of my spiralizer. If you’re looking to save some space, but still want to spiralize your cucumber, you could also check out the smaller version, which spiralizes veggies into noodle shapes (no option for ribbons). If you don’t have, or aren’t into, these gadgets, thinly slicing the cucumber will do the trick just as well.
I also love that this drink is a bit “lighter” than some other cocktails. I’m not a big soda drinker, but when I do drink soda, I can’t stand diet ones. In this punch, however, I can’t tell at all that the soda is low-calorie (I know, diet sodas are not the best for you, either…). You could also try this recipe using a flavored carbonated water if that is something you like the taste of.

Cucumber Lime Cocktail Punch
An easy and refreshing summer cocktail.
Ingredients
- 12 oz Container Frozen Limeade Concentrate
- 1 whole Cucumber
- 2 L Sprite Zero
- Optional/To Taste Vodka
Instructions

Spiralize or thinly slice cucumber.

Add soda, cucumber, and limeade concentrate to container of choice and mix.

Add vodka as desired... Note that the flavor of the vodka doesn't come through very strongly in this drink.. So be careful!

Let refrigerate for 2+ hours. Stir again before serving.
Recipe Notes
Depending on the size of your pitcher or punch bowl, you may not use the whole 2 L of soda. I saved the leftover soda and used it to refill the pitcher (as well as added a bit more vodka) after serving my first round of drinks.
